Asparagus
One of our specialties, asparagus is a spring and early summer crop. The asparagus plant roots store energy and nutrients throughout the winter until spring, when they send up their spears. We harvest them by hand, using specialized tools and bunch and pack them all by hand. Our asparagus is irrigated with buried drip. Did you know that the same field of asparagus, (after the initial 3 years needed to establish it before harvesting), can regenerate and grow back several years in a row? One of our fields is 8 years old and still sending up spears like a young'n.
Storage
Wrap in damp cloth or paper towel, store in cold refrigerator drawer. Rinse and cook within a week for ideal quality.

High in vitamins: A, C, E, K, and B6
Great source of: Dietary Fiber, Protein, Thiamin, Riboflavin, Niacin, Folate, Iron, Phosphorus, Potassium, Copper and Manganese.
Itβs hard to stray from simply prepared asparagus, especially at the start of the season, but we are (almost) always happy when we push ourselves to try a new recipe with our farm fresh organic produce. Inspired by the Pasta Grannies, we tried our hand at making asparagus sauce recently. The results? SO GOOD. What else can we use this with?
